Ignore cooking times.
If you’re trying to cook more, it’s likely that you’ll turn to recipes to help you cook meals that actually taste good. This isn’t a bad idea, per say, but it’s important to remember that recipes are more guidelines than they are rulebooks. You don’t have to do exactly what the recipe says. In fact, your food will probably taste better if you trust your eyes, nose and tongue instead of relying on a timer to tell you when your food is done cooking.
Cut everything to be the same size.
One of the keys to cooking well is making sure everything cooks evenly. If your food cooks unevenly, you’ll notice it in every bite you take. Some parts will be overcooked and some will taste a little raw. It’s hard to cook everything evenly when you’re working with different sized pieces, but you can alleviate this issue by cutting everything so that it’s the same size.
Let meat cool before cutting into it.
When meat heats up, the juices move towards the outside of the meat. As it cools down, those juices move back towards the middle. If you cut into the meat too quickly after taking it off the stove, you run the risk of letting the juices spill out onto your cutting board.
